Homemade Whole Wheat Bread

Homemade Whole Wheat BreadAre you intimidated by the process of making homemade bread without a bread machine? I was too, but then I learned how to make it, and I can tell you that it is not that difficult or time consuming. Best of all, you are controlling what you put in your food. Your bread will only be made with wholesome ingredients, not preservatives you can’t read and stand no chance of being able to pronounce.

Here is our go to recipe which we adapted from Healthy Bread in Five Minutes a Day:

Homemade Whole Wheat Bread

Dough in Tin  Baked in Tin

  • 2.5 cups whole wheat flour
  • 1.25 cups white flour (if you want to make it healthier, just use a total of 3.75 cups whole wheat flour and omit the white flour completely)
  • ¾ TBSP yeast
  • 2 TBSP vital wheat gluten (this can be found at most large grocery stores near the specialty grain products)
  • ¼ TBSP salt
  • 1.25 cups warm water
  • ¼ cup honey
  • 3 large eggs
  • 1/3 c. canola oil

Directions:

  • Mix the dry ingredients together in a large bowl.
  • Heat the water in the microwave for approximately 1 minute or until it reaches 115 to 120 degrees.
  • Mix the honey, eggs, and oil in a separate bowl. While stirring vigorously, add the water. (Stir while doing this so the eggs don’t get “cooked” by the water.)
  • Add the liquid ingredients to the dry ingredients until combined thoroughly.
  • Cover with a warm, damp towel, and set somewhere warm for 2 hours.
  • Turn out the dough on a flour covered table or countertop and knead until smooth (about 3 to 5 minutes by hand).
  • Spray a non-stick bread pan with cooking spray, and place the kneaded dough in the bread pan.
  • Cover with a warm, damp towel, and set somewhere warm for 40 minutes.
  • Place a pan filled with water on the bottom shelf of your oven. Preheat the oven to 350 degrees.
  • Place the bread on the top shelf in the oven and bake for 40 to 42 minutes, until brown all over.
  • Let rest on a rack until cool.

This loaf gives us approximately 14 slices, depending on how thick you slice the bread.

To save on costs, you may want to buy your baking ingredients at a warehouse store such as Costco or Sam’s Club. This will drop the price of your bread significantly.  While little three packs of yeast can cost $2.99, I can buy a package of yeast at Costco for less than $5 that has enough yeast to last me 6 months if I make this bread twice a week.  The cost savings is significant.

Also, the original recipe called for a double batch of ingredients. You make one loaf, and put the rest of the dough in the refrigerator to use later in the week. While this method is easier, we were not satisfied with the quality of the loaf made from the dough that was stored in the refrigerator, so we stopped making it this way. If you would like to try that technique, simply double the ingredients presented in this recipe.

    Once you eat homemade bread you’ve had a taste of heaven. The more robust flavor and texture of homemade whole wheat bread is even better. The fact that it’s good for you is the frosting on the cake!

    My mouth is watering… I love bread and this recipe looks wonderful. You said you didn’t like how the bread turned out when refrigerated the dough; I know people who freeze bread (that has already been baked). I wonder how this recipe would do in the freezer?

      Be sure that it has completely cooled, wrap it with foil and then put it in a plastic bag with as little air as possible. It should be fine for freezing that way. Thaw on the counter, unwrapped and loosely covered with a cloth.
