Rescue Brown Bananas with Banana Bread

Spotted Bananas - Future Banana Bread!My wife absolutely loves bananas and everytime we visit the store, she wants to pick up a bunch. Her eyes are invariably bigger than her appetite because every once and a while we will have a lone banana or two sitting on the counter looking all sad and brown. It won’t be totally brown, it’ll just have a few spots on it but be treated like a leper. For many months, my wife would just toss it in the freezer and declare that it will be sacrificed to the banana bread gods.

However, until last year, the banana bread gods never answered. Month after month, bananas would get tossed in and eventually our freezer was packed with all these brown frozen bananas that had no where to go! So, one day we (mostly she) decided we would finally make some banana bread. I’m really glad we (mostly she) did because it’s absolutely delicious.

I have no idea where my wife’s Banana Walnut Bread recipe comes from but here it is if you want to try it out:

Ingredients:

  • 1 1/2 C all purpose flour
  • 3/4 C cake flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • pinch nutmeg
  • 2 eggs, room temperature
  • 1/2 C vegetable oil
  • 1/2 C sugar
  • 1/2 C dark brown sugar
  • 3/4 lb. ripe bananas – 1″ chunks
  • 1/4 C orange juice
  • 1 tsp vanilla
  • 1 C whole walnuts

Instructions:
1. Heat oven to 325F, grease a 7 cup loaf pan.
2. Mix the flour, baking powder, cinnamon, baking soda, salt, and nutmeg and then transfer to wax paper.
3. Mix the eggs, oil (in a thin stream), within fifteen seconds, in a food processor. Process 15 seconds longer. With the machine running, add in the sugar and brown sugar.
4. Add in the bananas, vanilla, OJ, and mix for one minute. Add half the dry ingredients and the walnuts. Mix in with half second pulses. Add the remaining dry ingredients and repeat the pulses.
5. Cook in oven for approximately 70 minutes (or until done, you can use the fork test as you do with cakes). Allow it thirty minutes to cool.
6. Eat.

What’s the personal finance moral in this story? There isn’t really one, I just wanted to write about banana bread because it’s delicious. But, if you want a moral, it could be that if you have something you’ve been meaning to do, like make banana bread from the bananas in your freezer, remember to actually do it. When they say “it’s the thought that counts,” it’s usually after you do what you meant to do. :)

    Great recipe. My fiancee makes a similar recipe of banana bread and it’s great. If you want to make this recipe a little more healthy, try adding wheat flour in place of regular flour.

    Brown bananas are also great for smoothies…just peel them, put them in a baggie, and throw them in the freezer. Whenever you’re in the mood for a smoothie, just throw one or two in a blender along with fresh fruit and juice of your choosing and you’re all set!

    here is another thing you should definitely try out:
    peel some over ripe bananas, put them into a plastic bag, seal it well and leave them in the freezer… people will think it is icecream i swear!

    I also use overripe bananas for banana milkshakes, fruit smoothies, or freeze them into banana pops (just like ragin hari said – they taste like ice cream!).

    Quick tip – separate the bananas from the bunch when you bring them home and they ripen less quickly.

    A trick to keep the bananas fresher longer is to separate all the bananas as soon as you bring them home rather than leaving them in a bunch.

    Homemade banana bread is the best. I’ve made it twice in the past two weeks to use up overripe bananas.

    The finance moral is that home made banana bread firstly doesn’t waste money (bananas aren’t thrown out) & secondly saves money. Where I work has several food outlets, two of which sell at banana bread at $2.50 a slice. My visual estimation is that the banana breads I’ve made recently are the equivalent of 8 to 10 slices – buying a slice each day at work ranges in total cost from $20.00 to $25.00. The ingredients of the last banana bread I made cost $3.37. Hence buying the equivalent quantity at work ranges from 5.93 to 7.41 times more expensive than the homemade banana bread.

    The time involved isn’t a problem for me because I enjoy baking and cooking as a hobby.

    The other thing you can do to make it healthier is to reduce the amount of vege. oil to ~ 1/4 cup and add in another banana and an extra dash of orange juice. Don’t forget that you have to thaw the bananas before putting them into the Cuisinart! Happy Eating!

    I love it! This guy loves his wife’s banana bread and posts the recipe. I have several banana bread recipes, but I’m going to try this one; just because he likes it, and several others do as well. Thanks for being so loving to your wife and sharing with the rest of us.

    3/4 lbs = ~2.5 Medium bananas

    I sometimes will double check at the store on the scale but that is a close enough approximation.
